Fennel

Fennel bulbs have a delightful licorice or anise flavor when raw. When roasted or braised, they become mild and caramel-y sweet. Grate or slice thinly into a salad, add to a sheet pan of roasted veggies, or tuck hunks of fennel around a chicken or pork roast in the oven. 

Both the fronds and bulb are edible, but they store best when separated. Cut the fronds from the bulb and store them both in a bag or other airtight container for a week or more. Fennel will store for quite a while, but is most flavorful and crisp when it's fresh, so enjoy right away!
